WHOLE-y Food!

So far this day has been exhausting!  Sometimes, I like to help my mom out at her job, and that’s what I did today.  After we were done, we went grocery shopping at Whole Foods and grabbed lunch there.

Let me tell you something.  Lunch was flippin‘ phenomenal!  Every time I go to Whole Foods I always make my own salad, and it’s pretty great.

I put a field of spinach greens as my base.  I topped it with a hard-boiled egg, peas, celery, heart of palms, red peppers, a slice of grilled eggplant, feta cheese, sprouts, and roasted red pepper dressing.  Oh my yum!

I have more errands to run.  But expect a great post tonight.  I have a topic I’d like to cover.  I’ll leave you in suspense 🙂

Today on Young & the Restless…

Moving on…

Lets start with the whole Phyllis situation.

Oh. My. God.  When will this woman learn not to lie and keep her mouth shut?!  Each episode she’s digging herself into a larger hole.  Personally, it’s becoming more painful to watch this character create a larger mess for herself.

I think we will all know the end product for this story.  The walls are going to close in on her, she’s going to get convicted, wear the orange jumpsuit for a bit, and then her lawyer will find some obscure loophole and she’ll be a free woman.  Typical.

I’m also a little disappointed in what the writers have done to the character of Phyllis.  She used to be so feisty and added a lot of spice to the show.  Now it’s just a woman in a downward spiral.  Not so fun to watch.  This is not to be confused with how Michelle Stafford is performing Phyllis.  I think she’s a phenomenal actress!

I think there should be a drinking game for this whole Phyllis situation.  Drink every time someone gets angry with her.  You’d be black-out drunk 20 minutes in.

Also, I am kind of loving the chemistry between Greg Rikaart and Michelle Stafford.  It’s putting a comical spin on the whole entire situation, and it’s keeping my interest!

Since we’re on the subject…

Let’s also discuss how Ronan and Michael are complete idiots.  They know it’s Phyllis behind EVERYTHING involving Tim Reid.  But, they won’t do anything?  Don’t get me wrong, I completely understand the fact that they are trying to do good by Phyllis because she’s their friend.  But really?  They know she’s lying through her teeth.  They need to realize that it’s time to put their friendship on the side and actually do their jobs.

I honestly think my idea of getting a person on the show to punch characters in the face when they do something stupid would be perfect for this entire story-line.

Okay, now let’s talk about my favorite idiot, Sharon.

This “new” Sharon that everyone is talking about, I don’t see it.  She’s the same Sharon, clinging on to a rich and powerful man, saying “help me, I’m a damsel in distress!”  She just has more of a voice now.  And she’s going on a HUGE power trip.  Which is annoying, seeing that everyone is just going to hate her even more.

What would be funny is whenever Victor returns, he’ll like what she’s done with Newman Enterprises.  I’ll die.

Keepin’ it Light

So, dinner is too good not to post.  I decided to make a light dinner tonight, which turned out to be some delicious tortellini!

It was so good, I had to get seconds!

Ingredients

  • Tomatoes from my dad’s garden (One was a cherry tomato and I’m not sure what the other ones are called, but they’re shaped like pears)
  • Tomato from the farmers’ market (there’s definitely a difference in taste between tomatoes from the farmers’ market and at a grocery store)
  • Sun-dried tomatoes
  • 1 T of Pesto Sauce
  • 5-7 leaves of Basil from my dad’s garden
  • Grated Romano and Parmesan Cheese
  • Salt & Pepper
  • Olive Oil
  • 1 Packet of Tortellini

Cook the tortellini.  Drain it.  While the cooked tortellini is in the strainer, take the pot you just cooked it in, put it on low heat, and coat the bottom with olive oil.  Throw in all the tomatoes and basil and stir around for about 30 seconds. Pour the tortellini back into the pot and stir around some more.  Put the pesto sauce on the tortellini and stir some more, making sure everything is evenly coated with it.  Salt and pepper to taste.  Drizzle some more olive oil onto it and pour the cheese onto the tortellini.  Serve and enjoy!

Holy yum!

Something New and Something Colorful

Today has proved to be quite productive.  I was able to cross off everything on my To-Do List.  Yay me!

Let’s start off with something new.

I added a new page to this blog.  If you follow me on Twitter you know more than well that I love my Y&R (or #YR).  I figured if I love it so much then why don’t I marry blog about it?  So there you go, new page on my blog about my thoughts on the show.

Moving on.

My lunch is very colorful today!

Oh, the colors!

I was in the mood for nothing but vegetables!  So, I incorporated both raw and cooked veggies and it turned out to be delicious!

Here are the ingredients:

Raw Veggies:

  • About 3 Orange Pepper rings
  • About 3 Yellow Pepper rings
  • A handful of Spinach

Cooked Veggies

  • 3 Artichoke hearts
  • 1/4 Orange Pepper chopped
  • 1/4 Yellow Pepper chopped
  • 1/8 Onion Chopped
  • 2 slices of Portobello Mushrooms
  • A handful of Spinach

Seasonings

  • A pinch of Salt
  • A dash of Pepper
  • A dash of Chipotle Seasoning

Hummus sauce

  • 1 T Chipotle Hummus (You can choose whatever flavor you want. I personally like spicy chipotle)
  • A few drops of Lemon Juice
  • 1 T Water

When I finished cooking the vegetables, I combined the raw veggies.  Then I drizzled the hummus sauce on top of it.  The only thing I didn’t like about it was it got a little soupy at the bottom.  That was my fault because I had excess water from washing the vegetables.  Still tasted good, nonetheless!

Fitness Time!

I am feeling so much better today and I ended up running 3.8 miles.  I came back a sweaty mess, but it’s all good, I love the feeling!

Victory is mine!

As you all will be pleased to know, I’m not a complete failure!

If you read my post from yesterday you would have seen my lovely breakfast that I tried from Oh She Glows.  Well, this morning I decided to have leftovers; and this time I decided to cut that baby in half and make a PB&J like Angela did.  If you remember from yesterday I couldn’t do it, and ended up putting PB&J on top of the thing (which still tasted divine).  But today is different my friends.  I was able to cut the square in half without it falling apart!

And guess what?  It still looked unappetizing.

But you know what?  You can’t judge a book by its cover or an oatmeal square by its appearance.

All you need to know is that I was in PB&J heaven and you should all try this recipe… and also that I’m not a complete failure and can cut things in half. This is called victory, my friends!

I sincerely apologize if this is the first post you read from me because you probably think I’m some kind of nut job, rambling about how I’m able to cut a piece of bread in half.

Whatever.

I’m off to cross some things off my to-do list and I will catch up with you all around lunchtime.  Hopefully creativity is brewing in the kitchen like it was yesterday 🙂

It’s Quite Cheesy…

Have you ever walked into the kitchen and was like “I’m just going to put a whole bunch of crap together and see what I come up with”? Well, that’s what I did today for lunch and I ended up coming up with something delicious!

Nom.

An open-faced grilled cheese sandwich with a side of wedge potato fries!  Okay, so when I spell it out it doesn’t sound like a creative meal in the least.  HOWEVER, look at it! Look. At. It.  And it’s also the little things I’ve added to make my taste buds feel like they’re having a party in my mouth.

So what does this lovely open-faced sandwich consist of?

  • Vegenaise
  • 1 slice Ezekiel Bread
  • 1 slice of Mozzarella Cheese
  • 2 slices of Cheddar Cheese

So, this is what I did…

I got a non-stick frying pan and sprayed some Pam on it (it says it’s a non-stick pan, but let’s be real…it’s not).  Then I spread some vegenaise on one side of the bread and topped it with cheese and put it in the pan.  When I felt that the one side of the bread was all heated up, I flipped it over on the cheese side until all the cheese was melted.  When I took it off the heat, I sprinkled some chipotle seasoning on top of it.  I also made some wedged potato fries and  seasoned it with sea salt and drizzled some jalapeno olive oil on it.  Best. Lunch. Ever.

Time to talk about fitness!

I ran 2.5 miles today.  I have to say I was disappointed with my run, seeing that I hated every minute of it.  I was having some…err….stomach problems before my run.  I am blaming the Garbanzo Bean Burgers I ate last night.  Though I wasn’t feeling my best, I knew I needed to run.  I was really hoping I would run at least 3 miles today, but could only muster 2.5.  I’ll settle for it.  At least I did something, right?  Zooma tweeted me and told me that I did an awesome job! It’s the little things.

Back to school and PB&J

Good morning, everyone!

I don’t know if this is just me being a lazy college student with an awful case of senioritis, but I just can’t seem to focus!  School starts in a week and I haven’t thought much about it.  I even left my job for a couple of weeks to force myself to focus on school…what gives?

Maybe if I  go to Office Depot and get school supplies that might get me in the mode.

Am I the only one who gets excited about school because of the school supplies?  Each year it seems businesses will come out with the neatest/cutest things that students need for Back to School, and I always buy my fair share!

Ahhh!  I’m getting excited just talking about this!  Maybe writing about school supplies is what I need to get excited about going back to school?  Ha! What is my life?

Another thing I’m super excited about is this guy

I got it from Oh She Glows.  I was surfing the web to see what I should have for breakfast and I came across this recipe and I knew I HAD to try it.  I also went with her idea and made attempted to make a PB&J sandwich.  I quickly realized I don’t have the talent of cutting things in half so I just put the peanut butter and jelly on top.  It still tasted delicious!

First post!

Welcome to the Lively Herbivore!

You probably stumbled onto this page because I’ve either made you via some form of social media, you’re a family member, you share the same passions as I, or this blog got famous and you’re just creeping through my past posts.  Regardless of why you’re on my page, I welcome you and I hope you like what my blog has to offer!

For my first post I am going to tell you a little bit about myself and why I decided to create this blog:

So, tell me about yourself…

I am a Senior at Towson University where I am majoring in Business Administration with a concentration in International Business.  Though I love learning about business world, my real passion lies in food and living a healthy lifestyle.

I am also a runner (you can blame the London Olympics for this one).  Ever since watching the Track & Field events, I got inspired and signed up for some races (2 5Ks and a 5-miler…oh boy).  Some might think it’s only a phase, but my passion for running grows stronger everyday and it’s always on my mind.  It’s gotten to the point where when I am driving by people running, I get super jealous!  I’m weird, I know.

If you couldn’t tell by my blog name, I am a vegetarian…well, pescatarian.  I do eat the occasional fish, and if you put sushi in front of me, I will eat devour it.  Anyways, I think being a vegetarian is probably one of the best lifestyle choices I’ve ever made and I will never, ever, EVER go back to eating meat…ever.

Why blogging?

I am constantly researching ways I can be healthier.  Because of this I’ve come across a few health and lifestyle blogs and I got inspired!  Also, I’m the type of person when I get passionate about something I get excited and want to tell everyone and their mother about it.  So, what better way to do this than to blog about it?
